When I first started eating Paleo-Style, I really benefitted from seeing a few weekly meal plans. I knew that I could make “meat and vegetables,” but I needed some examples of how to make those things take shape on our plates.
Every weekend I sit down and plan my meals for the week. I usually go to the Farmer’s Market first, and then make a plan based on what is in season.
This is mainly just a dinner menu. We usually have eggs, frittatas, smoothies, Primal Oatmeal, diced chicken, etc., for breakfast. We always have leftovers from dinner for lunch the following day.

Wow! The holidays are over! I feel like I have been in a whirlwind for the last few weeks. All the traveling, family get-togethers, and holiday functions have come to an end, and it’s time to get back in a normal routine. I have to admit… I am so glad! I have missed the hum-drum of normal life so many times lately.
Here is what our “hum-drum” will look like this week… cannot wait!
Sunday
Last night we had Paleo Spaghetti. A quick, delicious meal on our list of “favorites.”
Monday
Tonight we’re having Mexican food, at Dustin’s request.
Tuesday
On Tuesday, I am making Sweet Potato Soup with NY strip steaks.
Wednesday
We have most Wednesdays off (since my husband works every Saturday). I am planning to do lots of cooking this Wednesday! We’ll have Chili Lime Sweet Potatoes with a big salad (topped with chicken) for lunch.
For dinner, I’m taking on my EasyPaleo Facebook Challenge (thanks Leah Isaacson!): Asian Ground Beef, Mushroom, and Broccoli Slaw Lettuce Cups.
Thursday
On Thursday, we’re having Butternut Squash Lasagna… Thanks for the suggestion Jennifer Patchin!
Friday
On Friday we are going to a family dinner. I have no idea what we’ll be having for dinner, but I will not be cooking!
Saturday
On Saturday, we are taking dinner over to eat with some friends. I’m making Spicy Beef Stew with a salad.
