Food Diary: Vacation!

We’re visiting friends in Colorado, and they took us out for Thai food our first night.  The Ginger Cafe was adorable, inside and out.

I chose a Thai Green Curry for dinner.  It was incredibly tender chicken, soaked in an amazing coconut curry sauce.  I asked the waitress to substitute sauteed vegetables instead of white rice.  Dustin chose Chicken Curry.  Both dishes were so delicious AND Paleo-friendly!  I love finding amazing Paleo meals while eating out.  And enjoying great foods with great friends just can’t be topped.

    No way! That’s my home town! I grew up there and my mum ran a Swiss German restaurant (which is now gone). Hope you enjoyed the Butte, I’m kind of partial to it!

      Crazy! We absolutely LOVED it! What a neat place to grow up… I would love to live in a place like that. I love small towns.
