I am not a fan of waking up early. In a recent Facebook status update, I announced that “I basically despise waking up before 9:00.” And actually, 9:00 is a stretch for me… 10:00 sounds much better. And this is not for lack of sleep! Over the last 3 months, Dustin and I have really made an effort to be sure we go to bed in time to get at least 8 hours of sleep. I guess we are just “night people,” instead of “morning people.”
All that to say, breakfast time is dicey since I would rather sleep than eat. When I have something prepared the night before, mornings flow much more smoothly. Frittatas are a great solution. As a matter of fact, last night I made a frittata just before going to bed.
I use this basic recipe, and change it up based on what I have in my fridge. Last night I had some starting-to-get-wilty kale, leftover steamed broccoli from a recent dinner, 1/2 of a tomato, and an onion. I added some salt, pepper, and oregano to the eggs, and then dumped it all together and crossed my fingers. It tasted delicious for breakfast this morning, and it only took a 30-second microwave re-heat. I can handle that.
