I have to admit, I have really missed mashed potatoes since being on the Paleo diet. I heard that turnips were a good substitute, and I found that to be true when I tried roasted turnips a few weeks ago. Last night I decided to make pureed turnips, and they were so similar to mashed potatoes- I was a happy girl!
All you have to do is cook 4 peeled/quartered turnips in the pressure cooker for 8 minutes. Then throw them in the food processor with 4 TBS grass-fed butter. Creamy deliciousness!
On top, I served spice-rubbed chicken breast (the rub is a mixture of paprika, black pepper, salt, cayenne pepper, poultry seasoning, oregano, and garlic powder). I cooked the chicken in the crock pot, with one sliced onion, for 2-3 hours on high.
It was a yummy dinner!
