Tonight I had a little extra time to cook, so I decided to try three NEW dishes!
The first dish was a recipe called “Butternut Squash Soup,” from Sarah Fragoso’s book Everyday Paleo. It was creamy and delicious. I love butternut squash, so I knew that this would be a fun one for me! It has coconut milk, chicken stock, nutmeg, and a few other delicious ingredients.
The second dish was something I came up with to use the getting-wilty swiss chard in my fridge. I sauteed onions, garlic, chicken, and cumin in coconut oil, and then added the chard until wilted. It doesn’t look amazing, but trust me- it was! I will absolutely be making swiss chard again.
The third dish was my favorite. I had never tasted turnips before, but I picked some up at the Farmer’s Market over the weekend, so I had to find a way to use them! I had heard that they were similar to white potatoes, so I decided to roast them. I peeled and diced them, spread them evenly on an aluminum-foil-lined baking sheet, tossed them with some grass-fed butter, seasoned with salt and pepper, and roasted them for about 30 minutes in a 425-degree oven. We were SO impressed with how amazing these tasted! They were soft, buttery, and delicious. I have missed white potatoes, so this was such an enjoyable dinner for me. I can’t wait to try mashed turnips… if they taste like mashed potatoes, I will be so excited!
