what are your thoughts on so many truly healthy (paleo, and close to paleo) recipes using olive oil for high heat cooking, such as “clothes make the girl” recipe for spicy okra? I’ve known for a long time not to use olive oil for cooking high heat, yet I’m just NOW realizing so many recipes call for it, especially on broiled veggies. I’ve even been guilty of recommending a broiled broccoli in olive oil recipe on my blog, and just this week stopped and realized that 450 degrees is “high heat”, uh oh. I don’t “fry” with olive oil, but putting it in a 450 oven sure seems like high heat to me.
