On The Menu {week of Apr. 16}

When I first started eating Paleo-Style, I really benefitted from seeing a few weekly meal plans.  I knew that I could make “meat and vegetables,” but I needed some examples of how to make those things take shape on our plates.

Every weekend I sit down and plan my meals for the week.  I usually go to the Farmer’s Market first, and then make a plan based on what is in season. 

This is mainly just a dinner menu.  We usually have eggs, frittatassmoothiesPrimal Oatmealdiced chicken, etc., for breakfast.  

We always have leftovers from dinner for lunch the following day.

This week’s menu is going up a little late.  It has been a little adjustment to plan around my gut-healing “protocol,” but now that all of that is underway, I finally did some planning!  Here it is!

Monday

On Monday night, we had Paleo Lasagna with local, organic, pastured pork sausage.  It was delicious!

Tuesday

.

Tonight I made Beef with Broccoli (no rice) with a side of sautéed kale.  To be completely honest with you, this recipe was not very good.  We used coconut aminos instead of soy sauce, and used almond meal instead of rice.  I was not impressed… but you have to have one of those occasionally!

Wednesday

.

Tomorrow night we’re having leftover beef from tonight, with sides of rainbow chard and Browned Radishes.

Thursday

.

On Thursday, we’re having BEST CHICKEN EVER, with a side of asparagus and roasted turnips.  Yum!

Friday

.

On Friday, we’re having dinner with some friends. Can’t wait!

Saturday

 .

On Saturday, we’re having Mexican Food with ground beef.

Sunday

.

 On Sunday, we’ll be attending a family event, so I’m not sure what will be on the menu.  Hopefully some meat and vegetables!

Better late than never, right?  Late Sunday evening, I came back in town from a week-long business trip.  Between the jet-lag, unpacking, and getting caught up on so many things, I neglected to post my menu for this week.  Here it is!

Monday

On Monday night, my husband made Bacon-Wrapped Chicken with sautéed peppers.  It was delicious!

Tuesday

Tonight I made Baked Chicken with mushrooms and cherry tomatoes, and a side of green beans with slivered almonds sautéed in coconut oil.  YUM!

Wednesday

.

Tomorrow night we’re having Mexican food.  Yes, we have this at least once a week.  It’s delish, simple, and cheap.

Thursday

On Thursday, we’re having Garlic Lemon Chicken with Balsamic Onions, and Roasted Baby Carrots.  Yum!

On Friday, I’m making Barbecue Chicken, and Brussels Sprouts with Bacon!

On Saturday, I’m trying a new recipe from Make it Paleo… Red Curry Chicken Skewers! Cannot wait!

 On Sunday, we’ll have Chicken Salad over baby spinach… a favorite in this house!

What’s on your menu this week?

 

Weekend Getaway | Menu

This weekend is one that my husband and I (yep, that’s us in the picture… isn’t he a looker?!) have been looking forward to for MONTHS!  We’re taking a weekend to relax in the mountains… unplugged from everything.  No computers, no cell phones, etc.  It is so important that we do something like this on a regular basis.  Sometimes we get so caught up in the stresses of daily life that we feel like we’re about to explode (I’m imagining a tea kettle that whistles when the steam gets too heavy inside… this weekend will be a little “lift-of-the-lid” on the tea kettle of our life!).  One of my new year’s goals was to STRESS LESS, and quarterly weekends away are a great way to keep the “steam” from becoming too heavy.

This weekend could not come at a better time… The week has definitely been pretty stressful, thanks to a big lightning storm and a few other unusual events!

So what will we do?

Well, we’re planning to watch a basketball game after dinner tonight (GO NC STATE!), and we’re going to see The Hunger Games sometime tomorrow.  Other than that, we’ll be doing a lot of sleeping, eating, resting, reading, taking walks, and just spending time together.

What will we be eating?

Several people have asked lately if we throw off the Paleo “guidelines” when we’re on vacation.  The answer is “NO… why would we want to feel like crap while we’re vacationing?”  I can’t imagine eating any better than we usually eat, anyway.  Who needs sugary doughnuts and greasy pizza to be happy?  Not us!  Though, we will have a few gluten-free “treats” with us (dark chocolate, etc.).

 We always try to plan on eating some “favorites” while we’re vacationing.

Friday: Today I’m making a big pot of chili so that we’ll have dinner when we arrive tonight, and lunch for tomorrow.

I’m bringing lots of avocados so we can top our chili with lots of guac!

Chocolate Chip Cookies for dessert… YUM!

Saturday: Tomorrow we’ll wake up and make bacon!

My husband has also requested that we have cereal (he has really missed cereal).  I’m bringing a box of puffed rice cereal (with no additives), and some home-made cinnamon-almond milk.

For lunch, we’ll have leftover chili and guac.

In the afternoon, I’m making some bacon-wrapped dates!

For dinner, I’m making Paleo Comfort Foods‘ Spicy Chicken Wings.  This will be a first-time recipe for me, and we can’t wait to try it!  As sides, we’ll have roasted asparagus and sweet potato fries.

Sunday: Breakfast will include BACON again!  I really stocked up when I grocery-shopped yesterday.  We’ll probably have the rest of the sweet potato fries, and some leftover asparagus along with it.

For lunch, we’ll finish up the rest of our leftover chicken wings and bacon-wrapped dates, and I’ll make a salad.

We will probably go out for dinner before driving back home.

What else are we taking?

I’m bringing some bone broth for us to sip throughout the weekend.

We’ll take a bottle of red wine from our favorite vineyard.

On Tuesday we’re starting our Whole30 AND our 21-Day Sugar Detox!  I’m going to make a big pot of Pressure Cooker Bone Broth so we can start getting the gut-healing effects of our cleanse.  We will also have some steaks and a salad.

Wednesday

On Wednesday, we’re having a Spice-Rub Roast with broccoli and portobello mushrooms.

Thursday

I think Chili and guacamole sounds DELICIOUS for Thursday!

Friday

On Friday, we are having Meatloaf  and a zucchini/onion stirfry.

Saturday

And on Saturday, we’re making steaks with a BIG salad, and my new favorite dressing.

This week is going to be a busy one, so all of these meals are ones I have made before.  I won’t have time to try alot of new recipes, but that’s okay!  We LOVE our standbys!  

Also, you will notice that most of these are chicken dishes.  We have an abundance of chicken right now, and we need to use it up!

Sunday

We will be coming in from a weekend trip on Sunday night, so we will have some leftover Beef Stew with Turnips that I just made.

Monday

On Monday evening, I’m going to whip up a batch of homemade Paleo Mayo so we can grub on Chicken Salad!   I could eat this recipe every single day.

Tuesday

On Tuesday, we’re going out to dinner with my husband’s Aunt and Uncle.  I LOVE hanging out with them, so I’m really looking forward to it!  We will probably do Mexican food, or something like that.  Check out my posts on eating out Paleo-style!

Wednesday

On Wednesday, we will have the day off.  I’m going to make Spaghetti Squash Omelettes for brunch.  I’ll also throw some Spice-Rubbed Chicken in the crock pot for dinner.  We’ll have Brussels Sprouts with Bacon on the side.

Thursday

I am SO excited about Thursday, because we’re going to make a favorite recipe that I have completely forgotten about!  It’s Indian Chicken, and I LOVE IT!  And trust me, we will be using GOOD tomato paste… not this crap.

Friday

Friday will be Mexican Stir-fry night!  We love to load on the Trader Joe’s Salsa Verde and enjoy some Mexican SPICE!

Saturday

On Saturday evening, we are eating dinner with our good friends, TJ and Erienne.  They are the ones who introduced us to Paleo, so I am sure we’ll have an amazing PALEO FEAST!  We always look forward to chilling with the two!

Wow!  The holidays are over!  I feel like I have been in a whirlwind for the last few weeks.  All the traveling, family get-togethers, and holiday functions have come to an end, and it’s time to get back in a normal routine.  I have to admit… I am so glad!  I have missed the hum-drum of normal life so many times lately.

Here is what our “hum-drum” will look like this week… cannot wait!

Sunday

Last night we had Paleo Spaghetti.  A quick, delicious meal on our list of “favorites.”

Monday

Tonight we’re having Mexican food, at Dustin’s request.

Tuesday

On Tuesday, I am making Sweet Potato Soup with NY strip steaks.

Wednesday

We have most Wednesdays off (since my husband works every Saturday).  I am planning to do lots of cooking this Wednesday!  We’ll have Chili Lime Sweet Potatoes with a big salad (topped with chicken) for lunch.

For dinner, I’m taking on my EasyPaleo Facebook Challenge (thanks Leah Isaacson!): Asian Ground Beef, Mushroom, and Broccoli Slaw Lettuce Cups.

Thursday

On Thursday, we’re having Butternut Squash Lasagna… Thanks for the suggestion Jennifer Patchin!

Friday

On Friday we are going to a family dinner.  I have no idea what we’ll be having for dinner, but I will not be cooking!

Saturday

On Saturday, we are taking dinner over to eat with some friends.  I’m making Spicy Beef Stew with a salad.

Every weekend I sit down and plan my meals for the week.  I usually go to the Farmer’s Market first, and then make a plan based on what is in season.  This week I already know what will be at the market when I go tomorrow, so my plan for the week is ready for you!

This is mainly just a dinner menu.  We usually have eggs, frittatas, smoothies, Primal Oatmeal, diced chicken, etc., for breakfast.  We always have leftovers from dinner for lunch the following day.

Sunday

We usually do a big Sunday brunch.  This week, on the recommendation of one of my FB fans, I am making Make It Paleo‘s Coconut Flour Pancakes and Bacon. YUM!

Some time on Sunday afternoon, I will make Paleo Mayo.  Then for dinner we’ll have a BIG Chicken Salad over Greens.

Monday

Monday will be Mexican Food Night at our house!  We love to toss seasoned ground beef and peppers over lettuce, and top with piles of salsa and guac.  Mmmm… and so easy!

Tuesday

We have evening plans on Tuesday, so I won’t have long to cook!  What a perfect night for Fall Beef Stew… in the pressure cooker!

Wednesday

We have the day off on Wednesday, so I will probably spend some extra time in the kitchen.  I think burgers, Warm Arugula Salad, and sweet potato fries sound great for a peaceful night at home!

Thursday

We’re having dinner with my husband’s parents on Thursday night, and I’m bringing a huge pot of chili!  I hope they like it!

Friday

I am super-excited that my Paleo-Pal, Erienne, and her hubby are coming for dinner on Friday night!  We always have a ton of things to discuss… recipes to share… tips to tell…  I’m making meatloaf, brussels sprouts with bacon (a FAVORITE!!!), and salad.

Saturday

Saturday will be Beef Stew again.  I really need to use up all this stew beef in my freezer!  I will toss beef and whichever veggies we have left into some broth, season it well, and pressure-cook it.
