Food Diary: Best Lasagna Ever

Yes, you read that correctly.  I made lasagna last night.  BUT, it was lasagna with a twist!  Check out the ingredients…

  • 1 lb hot Italian sausage, casing removed
  • 1 red onion
  • 3 cloves garlic
  • 1 15 oz can pizza sauce
  • 1/2 c roasted red peppers
  • 1/4 c extra virgin olive oil
  • couples leaves of fresh basil (leave it out if you don’t have it, just freshens up the sauce a bit)
  • 1 small butternut squash

One of the fans from my Facebook page recommended this recipe after I asked for a recipe challenge.  Thanks Jennifer Patchin!!  I was anxious to try it.  Here is the original recipe post on Health-Bent.com.

I started by browning some spicy Italian sausage… then added some onions and garlic…

Then I pureed the sauce (pizza sauce, red peppers, and olive oil)… I did not have fresh basil, so I added a healthy sprinkle of dried basil…

Then I layered some sauce, some peeled and sliced slabs of butternut squash…

Topped the “noodles” with the meat mixture, and then layered it all again…

We actually poured a second can of pizza sauce on top (we like it saucy!).  Into a 400-degree oven for 45 minutes…

And DONE!  Allow it to sit for about 30 minutes before serving…

Is this gorgeous, or what?

If you can even believe it, this dish tastes even better than it looks.  My husband took one bite, and immediately looked at me with wide eyes, nodding his head vigorously.  I think that means that he liked it!

I was rich and tantalizing.  I savored every bite.

    This looks AMAZING. I’ve been following your blog since I started researching going Paleo after I had my daughter 5 months ago. I’m not completely transitioned – but I’m almost there. I have been testing some of your recipes on my fiance and most of them he approves of – which is surprising as he tends to be a picky eater (though he’ll never admit to it;)). Thank you for all the great ideas!!!

    So glad you liked it! Making roasted red pepper is super-easy – I googled it and found it there. Also, with the squash, which is difficult to slice raw, I used a mandoline slicer to get even, thin slices (although yours looked excellent!). Just be careful that you don’t slice up your fingers, which I got a special glove for.

  4. This has become my new favorite meal! It just satisfies something my body craves… I used my traditional lasagna recipe for my sauce (mushrooms, onions, garlic, ground beef and tomato sauce) and just replaced the noodles with the butternut squash..no cheese, of course…DIVINE! It’s even better for left-overs…just finished my last piece for breakfast!

    This looks fabulous!!! I maka a “lasagna” too – using roasted eggplant, roasted zucchini, and spaghetti squash instead of pasta.

    This REALLY is the best lasagna ever! My boyfriend had the same reaction. I made a batch for him with sausage, and made a batch for myself (I’m vegetarian) with soft tofu that I mashed up to a ground beef-like consistency while sauteeing with the onions. Also, I used a simple, store-bought marinara for the sauce, and made my own roasted red peppers, which I chopped and sprinkled on each layer. Thank you so much for sharing!

  9. I’ve only ever made Butternut Squash sweet (with cinnamon and stevia) never savory like this… A MUST TRY!
